Ingredients
- 1 large egg
- 2 cups mixed salad greens
- 1/2 avocado, sliced
- 1/4 cucumber, sliced
- 1/4 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper, to taste
Method
- Cook the egg to your liking, poached works weel in this receipe.
- Place all the salad ingredients into a large bowl and toss.
- Add poached egg to the top and drizzle over olive oil, lemon juice and season to taste.
