Breadless Lentil Burger with Yoghurt, Tahini and Sauerkraut

Breadless Lentil Burger with Yoghurt, Tahini and Sauerkraut

Serves 2

Ingredients
  • 1 cup green lentils, cooked and drained
  • 2 tbsp. tahini
  • salt and pepper to taste
  • 1 tbsp. chia seeds
  • 2 tbsp. lemon juice
  • 4 large leaves of iceberg lettuce
  • 2 tbsp. Greek Yoghurt
  • ¼ cup sauerkraut 
Method
  1. Preheat the oven to 175C and line a baking tray with baking paper.
  2. In a food processor combine the lentils, tahini, salt and pepper, chia seeds and lemon juice.
  3. Form the mix into patties using about 1/4 cup for each patty. Bake for 20 to 25 minutes or until warmed through and firm.
  4. Remove the burgers from the oven. Serve wrapped in a lettuce leaf and topped with Greek yoghurt and sauerkraut.

Benefits

Lentils are a nutritional powerhouse delivering plant based protein and assist with digestive health as they are high in fibre. They are low GI and a ½ cup serving is a great source of folate, manganese, thiamine, iron, phosphorus, potassium and copper.
