Blackberry Greek Yoghurt Parfaits

Blackberry Greek yoghurt Parfaits

Serves: 4

Ingredients

Blackberry Chia Jam

  • 2 cups blackberries, fresh or frozen
  • 2 tbsp honey or maple syrup
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp chia seeds
  • yoghurt Layer
  • 400g Greek yoghurt
  • ½ cup mashed dragon fruit

Toppings

  • Fresh blackberries, sliced
  • Strawberries, sliced
  • 100g Granola 

Method

  1. In a saucepan, add blackberries, honey, lemon juice and lemon zest. Cook over medium heat for 8-10 minutes, stirring occasionally.
  2. Lightly mash the berries with a fork and stir in the chia seeds. 
  3. Allow the jam to cool and thicken.
  4. In a separate bowl, combine Greek yoghurt with mashed dragon fruit. 
  5. Divide the yoghurt mixture evenly among 4 jars or bowls.
  6. Spoon the blackberry chia jam over the yoghurt layer.
  7. Top with the fresh blackberries, sliced strawberries and granola.
  8. Serve immediately!

 

Meal prep tips

Fridge: These are very suitable for meal prep. Assemble in individual airtight containers or jars and refrigerate for up to 3–4 days.

Best texture: Keep the granola separate and add it just before eating. This prevents it from becoming soft and soggy.

Blackberry chia jam: The jam can be prepared ahead and stored separately in the refrigerator for around 5–7 days in a clean, airtight container.

Freezer: The blackberry chia jam is freezer-safe for around 2–3 months. Thaw overnight in the refrigerator and stir before using.

The assembled yoghurt cups aren't ideal for freezing, as Greek yoghurt can become grainy or watery after thawing and the fresh fruit and granola will lose their texture.

Health benefits  

Blackberries are particularly high in fibre and provide vitamin C, vitamin K and antioxidant polyphenols. They are a great way to make a naturally sweet jam without needing large amounts of added sugar.

Chia seeds add fibre, plant-based omega-3 ALA, calcium, magnesium and some protein. They also help thicken the blackberry mixture naturally.

Greek yoghurt is an excellent source of protein and calcium. It also provides fermented cultures depending on the product selected, making it a useful base for a filling breakfast or snack.

Dragon fruit provides fibre, vitamin C and antioxidant compounds while adding colour and natural sweetness.

Strawberries provide vitamin C, fibre and antioxidant compounds while being relatively low in calories.

Granola adds carbohydrates and crunch, but can vary substantially in calories and added sugar. A lower-sugar, higher-fibre granola is the better everyday choice.
