Berry Frozen yoghurt Bark

Serves: 8

Ingredients

Raspberry Layer:

  • 1 cup plain Greek yoghurt
  • ⅓ cup raspberries, fresh or frozen (thawed) 
  • 1 tbsp maple syrup

Blueberry Layer

  • 1 cup plain Greek yoghurt
  • ⅓  cup blueberries, fresh or frozen( thawed) 
  • 1 tbsp maple syrup

Toppings

  • 2 tbsp chopped pistachios
  • ⅓ cup chopped dark chocolate
  • 3 strawberries, sliced

Method

In a bowl, mash together the Greek yoghurt, raspberries, and maple syrup until smooth and creamy.

In a separate bowl, mash together the Greek yoghurt, blueberries, and maple syrup until smooth.

Line a tray with parchment paper. 

Spread the raspberry mixture on one half and the blueberry mixture on the other. 

Gently swirl the two together to create a marbled effect.

Sprinkle evenly with the chopped pistachios, dark chocolate and sliced strawberries.

Freeze until firm.

Break into pieces and serve.

 

Meal-prep tips

These are excellent for meal prep because they can be made in advance and kept frozen.

To prepare: Mix the Greek yoghurt, raspberries and maple syrup for the raspberry layer.

Mix the Greek yoghurt, blueberries and maple syrup for the blueberry layer.

Spoon the layers into silicone muffin moulds or small freezer-safe containers.

Add chopped pistachios, dark chocolate and sliced strawberries.

Freeze until completely firm.

Fridge: Keep covered in the refrigerator for approximately 2–3 days. Because the berries release moisture as they sit, the texture is best when eaten relatively fresh.

Freezer safe? Yes, freezer safe. Freeze for approximately 1–2 months for best quality.

For easiest meal prep, freeze them individually in silicone moulds, then transfer the frozen portions to an airtight freezer container or zip-lock bag.

To serve: Take one portion from the freezer and allow it to sit at room temperature for approximately 10–20 minutes, or thaw in the refrigerator for a few hours.

The texture will become softer as it defrosts. Do not refreeze once fully thawed.

Meal-prep tip: If you want the best texture, freeze the yoghurt-and-berry layers first and add the chocolate, pistachios and fresh strawberries after thawing. Fresh strawberries can become watery after freezing, whereas the chocolate and pistachios hold up well.

Health benefits 

Greek yoghurt provides a useful amount of protein and calcium. Using a high-protein Greek yoghurt makes these bites particularly good as a snack when you're trying to increase protein intake.

Raspberries are an excellent source of fibre and provide vitamin C and antioxidant compounds. They contribute more fibre per gram than many other common berries.

Blueberries provide vitamin C, vitamin K and anthocyanins, antioxidant compounds responsible for their deep blue colour.

Pistachios provide unsaturated fats, plant protein, fibre, magnesium and other micronutrients. The small amount here adds texture and healthy fats without substantially increasing the calories.

Dark chocolate provides cocoa polyphenols and minerals such as magnesium and iron. Choosing dark chocolate with a higher cocoa percentage generally provides more cocoa solids and less added sugar.

Strawberries provide vitamin C, fibre and antioxidant compounds while adding sweetness and freshness.
