Ingredients
- 500g beef mince
- 1 small onion, diced
- 2 tbsp taco seasoning
- ¼ cup fresh parsley, finely chopped
- 4 large whole wheat tortillas
- 1 cup mozzarella cheese
- Olive oil for brushing

Method
- Preheat the oven to 425°F (220°C).
- Brush a baking dish with oil.
- In a large mixing bowl, combine the ground beef, onion, taco seasoning, salt, pepper and parsley.
- Mix all together until well combined.
- Lay a tortilla on a clean surface.
- Spread a thin, even layer of the beef mixture over the tortilla.
- Sprinkle mozzarella cheese.
- Roll the tortilla up tightly into a log.
- Slice the roll into 1 inch rounds.
- Arrange the rounds cut-side up on the baking dish.
- Lightly brush the tops with olive oil.
- Bake for 30–35 minutes until golden brown and crispy.
Meal prep tips
Fridge: Once cooked, cool promptly and store in an airtight container for 3–4 days.
Meal prep: These are excellent for batch preparation. Cook the beef mixture, assemble the tortilla bites and bake. Allow them to cool completely before packing into individual portions.
Freezer: Yes, they are freezer-friendly. Freeze cooked bites in an airtight container or freezer bag, separating layers with baking paper. For best quality, use within 2–3 months.
Reheating: Thaw overnight in the refrigerator, then reheat in the oven, air fryer or microwave until thoroughly hot. The oven or air fryer will give you a much crispier tortilla.
For lunchboxes: Pack chilled and use an insulated lunch bag with an ice pack if they will be out of the refrigerator for an extended period.
Tip: Don't overdo the olive oil when brushing—the tortillas will crisp nicely with only a light coating.
