Baked Strawberry Cheesecake Cups

Baked Cheesecake Cups

Serve: 3

Ingredients:

  • 100g light cream cheese
  • 100g Greek yoghurt
  • 2 tsp honey
  • 1 egg
  • Homemade strawberry jam (recipe below) 
  • Coconut flakes for garnish 

Method for cheesecake cups: 

1. Preheat the oven to 180C. 

2. In a bowl, combine light cream cheese, yoghurt, honey and egg. 

3. Pour into muffin cups and bake for 20 minutes. 

4. Let it cool down completely and chill in the fridge for 1-2 hours. 

5. Spoon up the jam over each cheesecake and garnish with coconut flakes.

Strawberry Jam

Makes: 2 cups 

Ingredients

  • 500 g fresh strawberries (hulled and chopped)
  • 1/4 cup coconut sugar 
  • 1 tbsp lemon juice (fresh)

Optional: 1 tsp vanilla extract for extra flavour

Method

Prep strawberries: Wash, hull, and chop into small pieces.

Combine ingredients: In a medium saucepan, add strawberries, sugar, and lemon juice. Stir to combine.

Cook: Heat over medium heat until sugar dissolves, then bring to a gentle boil. Reduce heat to low and simmer, stirring occasionally, for 15–20 minutes, until thickened.

Check consistency: Place a small spoonful on a cold plate — if it sets after a minute, it’s ready.

Optional: Stir in vanilla extract.

Cool & store: Pour into clean jars and let cool. Refrigerate up to 2–3 weeks.

Tips

Chunky jam: Mash slightly with a fork while cooking.

Smooth jam: Use an immersion blender for a few seconds.

Sugar-free/low-sugar: Use 2–3 tbsp honey or maple syrup instead of sugar.

Long-term storage: For shelf-stable jam, sterilize jars and process in a boiling water bath.
