Baked Layered Tortilla Pie

Baked layered tortilla pie

Ingredients

  • 800g lean mince beef
  • 1 onion, diced
  • 1 tsp minced garlic
  • 1 pack low salt taco seasoning
  • ¼ cup water
  • 5 wholemeal tortillas (low carb option)
  • 1/2 cup tomato passatta
  • 100g mozzarella cheese 

Method: 

  1. Preheat the oven to 175C 
  2. Prepare a springform pan and spray with olive oil. 
  3. Heat a large pan over medium high heat, add beef and onion. 
  4. Cook until there is no pink left in the meat. 
  5. Add the garlic, taco seasoning and water. Cook for another 4-5 minutes.

Assemble: 

  1. Place one tortilla in the springform pan.
  2. Spread tomato passatta, then add meat mixture and sprinkle cheese. 
  3. Create layers of tortilla, tomato passatta, meat mixture and cheese until you’ve done 4 full layers. 
  4. Last tortilla, just top with cheese only. 
  5. Bake for 20 minutes.
  6. Allow the pie to cool and slice to serve!
