Baked berry protein pancake
Serve: 4
Ingredients:
- 2 eggs, lightly beaten
- 3/4 cup (150 g) Greek yoghurt
- 100g chia jam or preferred jam (chia jam recipe here or find it on the App)
- 1 tsp vanilla extract
- 5 tbs arrowroot powder
- A pinch salt
- 30g Frozen berries
Optional: Serve of vanilla or strawberry protein powder

Method:
- Preheat oven to 175C
- Line an 8×4 inch loaf pan with parchment paper.
- Place all the ingredients except frozen berries in a blender.
- Blend until smooth.
- Transfer mixture to the prepared pan and top with frozen berries.
- Bake for 30-40 minutes or until a toothpick comes out clean.
- Allow to cool completely, slice and enjoy!
