Asian Noodle Salad with Chicken Peanut Dressing

Serve: 4 

Ingredients: 

  • 4 chicken thighs, sliced (approx 400g)
  • 1 tbsp honey
  • 1 tbsp soy sauce 
  • 1/2 tsp ginger powder
  • 1 tsp garlic powder
  • 1/2 tsp salt

Peanut Dressing

  • 2 tbsp peanut butter
  • 2 garlic cloves 
  • 1- inch fresh ginger
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp water 

Salad

  • 120g vermicelli rice noodles
  • 4 cups chopped lettuce
  • 2  small cucumbers, sliced
  • 1 grated carrot
  • ⅔ cup chopped coriander 
  • ½ cup chopped peanuts 
  • 4 spring onions, chopped
  • 1 fresh chilli, sliced 
  • 2 tbsp chilli oil

Method: 

Place the chicken thighs in a bowl and marinate with ginger powder, garlic powder, honey and soy sauce. 

Toss to coat well and let it sit for 30 minutes.

To make the dressing: place all the listed ingredients in a blender and blend until smooth. 

Cook the noodles according to the package’s directions. Rinse under cold water and drain. 

Heat a large skillet on medium high heat. Add the chicken thighs and cook for 5-6 minutes per side until golden brown and cooked through. 

In a salad mixing bowl, add lettuce, noodles, cucumbers, coriander, spring onions, roasted peanuts and chilli. 

Top with delicious soy chicken. 

Pour the dressing over and toss until well mixed. 

Serve with chilli oil, enjoy!
