Antioxidant Salad
Serve: 4
Ingredients:
- ¼ purple cabbage, diced
- 2 carrots, diced
- 1 red capsicum, diced
- 1 small red onion, diced
- 1 cup corn kernels
- 1 cup pomegranate seeds
- A handful of parsley, finely chopped
Dressing:
- 1 garlic clove, minced or grated
- 2 tbsp olive oil
- 1 lemon, juiced
- 1 tsp sumac
- 1 tsp salt
- 1 tsp honey (VG if required)

Method
1️. Place all the vegetables in a large mixing bowl.
2️. Make the dressing by combining all the ingredients.
3️. Pour the dressing over the salad and mix well.
