Vego Lasagne Roll Ups
Serves 6
Ingredients
- 1 large eggplant, thinly sliced
- 1 cup pumpkin, diced
- 2 cups ricotta cheese
- 1 small lemon, zest and juice
- 1 cup parmesan cheese, grated
- 1 cup basil leaves
- 3 tbsp. olive oil
- salt and pepper
- 2 cups passata (500ml)
Method
- Preheat the oven to 220C and line a baking tray with baking paper. Sprinkle the sliced eggplant with a little salt on each side and set aside.
- In a bowl mix the ricotta, lemon zest and juice, half the parmesan, basil, oil and season well.
- Pat the eggplant dry with a paper towel, lay slices on an oven tray along with diced pumpkin and bake for 15 minutes. Turn the oven down to 180C.
- In a lasagne dish, spread ¾ of the passata. Once eggplant is cooked and cooled, spread about 2 tablespoons of ricotta mix onto each slice and a few cubes of pumpkin and roll them up, placing them seam side down in the baking dish as you go.
- Top with remaining passata and parmesan and bake for 15-20 minutes.
