Greek Baked Eggplant Recipe
Serves 4
INGREDIENTS
• 2 large eggplants, sliced lengthwise
• 2 tbsp olive oil
• 1 large onion, finely chopped
• 3 cloves garlic, minced
• 1 red capsicum, chopped
• 1 can (400g) diced tomatoes
• 200g crumbled feta cheese
• 1/2 cup (120g) plain Greek yogurt
• 1/4 cup (25g) grated Parmesan cheese
• 1 tsp dried oregano
• 1 tsp dried thyme
• 1/2 tsp ground cinnamon
• Salt and pepper to taste
• Fresh parsley, chopped (for garnish)
METHOD
Preheat the oven to 180°C (350°F).
Place the sliced eggplants on a baking sheet, brush with olive oil, and season
with salt and pepper.
Bake for 20 minutes, or until tender and slightly browned.
While the eggplants are baking, heat the remaining olive oil in a large skillet over
medium heat. Add the chopped onion, garlic, and red capsicum. Sauté for 5-7 minutes until the vegetables are softened.
Add the diced tomatoes, oregano, thyme, cinnamon, salt, and pepper to the skillet.
Simmer for 10 minutes, allowing the flavours to meld together.
In a bowl, mix the crumbled feta cheese and Greek yogurt until well combined.
Remove the eggplants from the oven and place them in a baking dish. Top each slice with the tomato and vegetable mixture, followed by the feta and yogurt mixture.
Sprinkle the grated Parmesan cheese on top. Return the baking dish to the oven and bake for an additional 20 minutes, or until the top is golden and bubbly.
Garnish with fresh parsley before serving
