Tofu and Vegetable Stirfy

And today we are sharing a recipe from our Zing Wellbeing program and this one uses tofu as the main protein.

And here's some reasons why we like tofu

  • High in Protein: Tofu is an excellent source of plant-based protein, making it a great option for vegetarians and vegans. Protein is essential for muscle repair, growth, and overall body function.
  • Rich in Nutrients: Tofu is packed with essential nutrients, including iron, calcium, magnesium, and zinc. It also contains all nine essential amino acids, which are crucial for various bodily functions.
  • Heart Health: Tofu contains isoflavones, which are phytoestrogens that may help lower bad cholesterol levels and reduce the risk of heart disease. Additionally, tofu is low in saturated fat and cholesterol-free, promoting cardiovascular health.
  • Bone Health: The calcium content in tofu, especially if made with calcium sulfate, can contribute to bone health and help prevent conditions like osteoporosis. The isoflavones in tofu also play a role in maintaining bone density.
Tofu and Vegetable Stir-Fry with Brown Rice (Serves 4)
 Ingredients:
  • 500g tofu, cubed
  • 200g cooked brown rice
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 capsicum, sliced
  • 2 cups broccoli florets
    2 carrots sliced
    1/4 purple cabbage, shredded 
  • 1 cup snap peas
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp grated ginger
Instructions:
  1. Heat olive oil in a large pan over medium-high heat.
  2. Add onion, garlic, and ginger; sauté until fragrant.
  3. Add tofu and cook until golden brown.
  4. Add capsicum, broccoli, and snap peas; cook until tender.
  5. Stir in soy sauce and sesame oil; cook for another 2 minutes. Serve with cooked brown rice.
