Tofu and Vegetable Stirfy
Tofu and Vegetable Stir-Fry with Brown Rice (Serves 4)
Ingredients:

500g tofu, cubed

200g cooked brown rice

2 tbsp olive oil

1 onion, chopped

2 garlic cloves, minced

1 capsicum, sliced

2 cups broccoli florets
2 carrots sliced
1/4 purple cabbage, shredded -
1 cup snap peas

2 tbsp soy sauce
-
1 tbsp sesame oil
-
1 tbsp grated ginger
Instructions:

Heat olive oil in a large pan over medium-high heat.

Add onion, garlic, and ginger; sauté until fragrant.

Add tofu and cook until golden brown.

Add capsicum, broccoli, and snap peas; cook until tender.

Stir in soy sauce and sesame oil; cook for another 2 minutes. Serve with cooked brown rice.
