The Viral Marry Me Chicken recipe made healthy!

The viral marry me chicken recipe made healthy with nearly 30g protein and only 9g carbs! 

Plus super easy, just pop all the ingredients in the slow cooker and forget. 

Slow cooker Marry Me Chicken

Serve: 4

Ingredients

  • 4 single chicken breasts 
  • 2 tbsp flour 
  • 1 tbsp paprika 
  • Salt & pepper to taste
  • 2 tbsp olive oil
  • 1 tsp thyme 
  • 1 tsp oregano
  • Fresh basil
  • 120g Sundried tomatoes
  • 2 tbsp tomato paste or pesto
  • 200ml chicken stock
  • 1 onion, finely chopped
  • 1 tbsp garlic powder
  • 50 ml cooking cream (light) or greek yoghurt
  • ¼ red capsicum, diced 
  • 2/3 cup cherry tomatoes
  • ½ cup baby spinach

Method

1. Mix together flour, paprika, salt and pepper in a large plate. Coat the chicken and cook on a hot pan for 1-2 mins each side or until brown both sides. 

3. Transfer to a Slow Cooker with the remaining ingredients except cream and basil. 

4. Cook for 7-8 hours on low, or cook on high for 3-4 hours. 

5. Stir in cooking cream and basil for the last 10 mins. Serve with steam broccoli and brown rice or quinoa. Enjoy!
