Chicken Edamame Salad (Serves 4)
Ingredients:
• 5 cups shredded cabbage (or use a bag of coleslaw mix)
• 1 cup shelled edamame
• ¾ cup sliced spring onions
• 2 cups shredded chicken
• 1 apple, diced
• ⅓ cup cooked quinoa (or brown rice)
• ⅓ cup chopped roasted cashews (optional)
Dressing:
• ½ cup plain yoghurt
• ¼ cup sweet chilli sauce
• 1 tbsp toasted sesame oil
• 3 tbsp soy sauce
• ⅓ cup apple cider vinegar
Method
1. Cook quinoa and edamame as per package instructions.
2. Whisk dressing ingredients in a small bowl.
3. Toss all ingredients together in a large bowl with dressing.
