Thai red noodle soup with crispy gyozas recipe

Serves: 4

Ingredients

  • 1 tbsp olive oil
  • 1 spring onion, sliced
  • 1 bok choy, diced (white stalk)
  • 1 carrot, diced
  • 4 garlic cloves, minced
  • 10g ginger, minced
  • 3 tbsp Thai red curry paste
  • 300ml light coconut milk
  • 500ml chicken stock
  • 1 lime, juiced
  • 1 tbsp fish sauce
  • 8 gyozas or dumplings
  • 100g rice noodles, cooked
  • 200g cooked chicken breast, chopped
  • Crushed peanuts
  • Fresh coriander

Method

Heat the olive oil in a large soup pot over medium heat. Add the garlic, ginger, spring onion, bok choy and carrot and sauté for 2 to 3 minutes until fragrant and softened.

Stir through the Thai red curry paste and cook for 30 seconds to release the flavours.

Pour in the coconut milk, chicken stock, fish sauce and lime juice. Bring to the boil, then reduce heat and simmer for 15 to 20 minutes.

Meanwhile, fry the dumplings or gyozas until golden and cooked through.

To serve, divide the cooked rice noodles between bowls. Pour over the hot soup and top with chopped chicken, crispy dumplings, coriander, crushed peanuts and a lime wedge.
