Serves: 20 dumpling tacos
Ingredients
Dumpling wrappers
- 20 store-bought dumpling wrappers
- 1 tbsp olive oil
Filling
- 400g chicken mince
- 3 cloves garlic, crushed
- 1-inch piece fresh ginger, grated
- 4 spring onions, chopped
- Handful coriander, chopped
- 1 tbsp light soy sauce
- 1 tsp dark soy sauce
- 1/2 tsp sesame oil
- 1 tsp rice wine vinegar
- 1 egg
- Salt and pepper
Toppings
- Cucumber, sliced into thin strips
- Carrot, sliced into thin strips
- Spring onions, chopped
- Coriander
- Chilli oil
Method
- Place all filling ingredients into a bowl and mix well.
- Scoop approximately 1-2 tablespoons of filling onto each dumpling wrapper and flatten slightly.
- Heat olive oil in a large frying pan.
- Place the dumpling filling-side down into the pan and press gently.
- Cook for approximately 2 minutes.
- Flip over and add 2-3 tablespoons of water.
- Cover with a lid and steam for 1 minute.
- Remove the lid and continue cooking until the base becomes golden and crispy.
- Transfer to a serving plate.
- Top with cucumber, carrot, spring onions, coriander and chilli oil.

The filling can be prepared up to 24 hours ahead and stored in the fridge. You can also prepare all toppings in advance to make dinner even quicker.
