Simple Salmon Tacos

Ingredients
- 300g salmon fillets
- salt and pepper
- 1 tsp taco seasoning (GF free if required)
- 1 avocado
- 4 corn tortillas
- 1 cup cherry tomatoes, chopped
- ½ cup coriander, chopped
- 1 lime, sliced, for serving
Method
- Preheat the oven to 190C and line a baking tray with baking paper.
- Season the salmon with salt, pepper, and taco seasoning. Place the salmon on the baking sheet and cook in the oven for 12 to 15 minutes or until cooked through.
- Using a fork, mash the avocado in a small bowl. Season with salt and pepper.
- Spread the mashed avocado onto the tortillas. Flake the salmon and evenly divide it between tortillas.
- Top with tomatoes and coriander. Serve with lime slices and enjoy!
