Peanut Butter Beef Stir Fry

Serves 4

For the Sauce 

  • 2 tbsp fish sauce (or soy sauce)
  • 1 tsp honey
  • 1 clove garlic, minced
  • ½ tsp ginger powder 
  • 2 tbsp natural peanut butter

For the Stir-Fry

  • 350g of stir fry beef strips
  • 2 tbsp grapeseed oil
  • 1 red onion, sliced
  • 1 carrot, julienned
  • 2 cups bean sprouts
  • 2 baby bok choy, chopped roughly

To Garnish

  • 2 spring onion stalks, sliced
  • ¼ cup crushed peanuts

Method

  1. Mix all sauce ingredients together in a small bowl and set aside. 
  2. Pop the beef in a bowl and add 1 tablespoon of the sauce  and set aside for 10 minutes to marinate. 
  3. Heat grapeseed oil in a large wok and add onion. Cook for 1 minute before adding marinated beef. Keep the beef and onion moving for a few minutes until the beef is sealed. Add carrots, bean sprouts, bok choy and the remaining sauce and keep stirring for a further 3-4 minutes or until veg are cooked to your liking.
  4. Turn off the heat and add spring onion and half the peanuts. Stir.
  5. Serve with extra peanut garnish on top.

Benefits

Peanuts are not actually a nut, they are among the highest protein legumes and are a great source of healthy fats. Mixing this with protein rich, iron and B12 packed beef as well as lots of nutrient rich vegetables will give you a home-made satay that will serve you during this transition.
