If you overindulged during the holiday season and now really need to focus on your health and need a good liver cleanse then this Artichoke and goats cheese frittata recipe is just the thing you need.'  

Artichoke is often used as a herbal medicine for liver health and is also great for the liver as a food. While the Goats cheese in this recipe is a great addition as it is lower in fat than other cheese so may be easier for some to digest and it contains calcium, protein, vitamin A.

Artichoke and goats cheese frittata 

Serves 6

Ingredients

  • 2 tbsp. olive oil, plus extra for brushing
  • 3 spring onions, sliced
  • 2 cloves garlic, crushed
  • 150g marinated artichokes, drained, quartered
  • 6 eggs
  • ½ cup thickened cream
  • ½ cup parsley, chopped
  • ½ cup dill, chopped
  • Zest of 1 lemon
  • 120g soft goat’s cheese, crumbled
  • 400g cherry tomatoes, halved

Method

  1. Preheat oven to 200°C. Heat oil in an oven proof fry pan over medium-low heat. Add spring onion, garlic and artichoke and cook, stirring, until shallots are softened but not coloured. Remove from the pan and cool slightly.
  2. Whisk eggs and cream together in a bowl, then stir in the herbs, lemon zest, spring onion mixture and half the goat’s cheese. Season. Pour mixture into the fry pan, top with tomatoes. 
  3. Bake frittata for 20-25 minutes until edges of the frittata are puffed and cooked and the centre is just set. Scatter with remaining goat’s cheese and extra herbs to serve.

Bile helps us to digest fats efficiently and flush out any toxins from our system supporting the liver’s process. It is also full of antioxidants which help prevent free radical damage to the liver.

Goats cheese is a great addition as it is lower in fat than other cheese so may be easier for some to digest and it contains calcium, protein, vitamin A and has even been shown to be anti-inflammatory which may assist conditions like non-alcoholic fatty liver disease.
