10 minute healthy sweet chilli chicken flatbreads

Serve: 1 

Ingredients:

  • 100g of raw chicken breast
  • 1/4 red capsicum, sliced
  • 1/4 onion, chopped
  • 30g grated cheese mozzarella
  • 20g sweet chilli sauce
  • 1 flatbread (find the recipe to DIY here)
  • ½ tsp paprika 
  • ½ tbs olive oil
  • Salt and pepper to taste
  • Handful of parsley

Method:

Heat a skillet over medium heat, add olive oil and chicken. Fry for 3-4 minutes until the chicken is 90% cooked 

Add in capsicum, onion, paprika, salt and pepper. Cook for a few minutes. 

Stir in sweet chilli sauce and toss to combine. 

Let a mixture cool down for 2-3 minutes before adding to the flatbread

Sprinkle cheese and grill/ bake for a few minutes until the cheese has melted. 

To serve: sprinkle parsley!
