Mouth watering and low carb layered eggplant bolognaise

Layered Eggplant with Ragu
Servings: 4
Ingredients:
• 2 eggplants, sliced
• 5 tbsp olive oil
• Salt and black pepper
• 200-250g mince beef
• 1 red onion, chopped
• 2 garlic cloves, minced
• 1 red capsicum, diced
• 1 tsp tomato paste
• 7-8 tbsp tomato sauce
• Paprika
• 200ml hot water
• Mozzarella cheese
Method
1. Slice eggplants and brush with olive oil, salt, and black pepper.
2. Bake in a preheated oven at 220°C for 20 minutes.
3. In a pan, sauté onion, garlic, and capsicum, then add beef and cook until browned.
4. Stir in tomato paste, sauce, paprika, salt, and pepper. Simmer with hot water.
5. Layer eggplants with the ragu mixture in a baking dish.
6. Top with mozzarella and bake at 190°C for 20 minutes.
7. Serve warm and enjoy!
