Moroccan Spiced Turkey Burgers With Feta

Serves 6
Ingredients
- 1 tsp olive oil
- ¼ onion, chopped
- 4 garlic cloves, minced
- 1 tbsp. Moroccan spice blend
- 1 egg, whisked
- 550g turkey mince
- ¼ cup parsley, chopped
- ½ cup breadcrumbs
- ½ cup Greek yoghurt
- ½ cup feta, crumbled
- 2 tsp lime juice
- 6 wholemeal buns
Method
- Preheat oven to 175C. Heat the oil in a large pan over medium heat. Once hot, add the onion and cook until softened and just starting to brown, about five minutes.
- Add the garlic and Moroccan spice blend and cook, stirring often, for one minute, until fragrant. Remove from the heat, add the onion mixture to a large bowl, and wipe out the pan.
- Add the whisked egg to the same bowl as the onion mixture. Add the turkey, parsley, and bread crumbs to the same bowl. Mix until combined. Form the mixture into even patties, one per serving. Heat the same pan over medium heat.
- Add the patties and cook for three to four minutes per side. Transfer to the oven and cook for nine to ten minutes or until cooked through.
- Meanwhile, in a small bowl, combine the yoghurt, feta, and lemon juice. Spread the feta mixture on the bottom bun and top with the burger. Spoon extra sauce on top of the burger.
