Moroccan Chickpea Stew Recipe

Serves 4 

INGREDIENTS
• 2 cans chickpeas, drained, rinsed
• 1 can diced tomatoes
• 1 onion, chopped
• 2 carrots, sliced
• 1 zucchini, sliced
• 2 cloves garlic, minced
• 1 tbsp olive oil
• 1/2 cup cooked lentils
• 400g cooked chicken breast, diced
• 1 tsp cumin
• 1 tsp paprika
• 1/2 tsp cinnamon
• Salt and pepper to taste



METHOD
Heat olive oil in a pot over medium heat.
Add onion and garlic, and cook until translucent.

 


Add carrots, zucchini, cumin, paprika, and cinnamon, and cook for 5 minutes.
Add chickpeas, diced tomatoes, cooked lentils, and cooked chicken breast, and simmer for 20 minutes.
Season with salt and pepper to taste.
