Low Carb & High Protein Chicken Broccoli Alfredo Bake

This Chicken Broccoli Alfredo Bake recipe is very low carb with only 10g and super High in protein with 48g, supporting muscle growth and repair, it is also Low in fat, ideal for lean muscle development and weight management. 

PLUS high in fiber, supporting digestive health and Contains vitamin C for immune function and antioxidants that promote cellular health.

Chicken Broccoli Alfredo Bake 

Serve: 4 

Ingredients 

  • 500g chicken breasts, cubed
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt to taste
  • 2 tbsp olive oil
  • 1 broccoli, cut into florets
  • 1 cup shredded parmesan cheese (topping, you may prefer less)
  • 1 cup shredded mozzarella cheese (topping, you may prefer less) 

Alfredo sauce:  

  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup cottage cheese, drained
  • ¼ cup almond milk (optional)
  • Pinch of nutmeg
  • 1 cup shredded parmesan cheese
  • 1 cup shredded mozzarella cheese

Method:

  1. Preheat your oven to 190C 
  2. Add your alfredo sauce ingredients and mix together. 
  3. Toss your chicken breast cubes with 1 tsp onion powder, 1 tsp garlic powder and salt generously. 
  4. Heat the olive oil in a large skillet on medium high.
  5. Cook the marinade chicken until golden brown. Remove from heat and set aside. 
  6. Add broccoli florets to your baking dish & evenly spread out. 
  7. Then add the cooked chicken pieces and Spread alfredo cottage cheese sauce and sprinkle on the remaining cheese. 
  8. Bake for 30-35 minutes to get it golden brown on top.
