Ingredients (Serves 4)
For the burgers:

500 g chicken mince

¾ cup almond flour

¼ cup pesto

½ cup cottage cheese

2 tbsp fresh basil, chopped

1 egg

2 tsp garlic powder

Salt and pepper to taste
To serve:

2 tomatoes, sliced

4 cheese slices

Fresh basil leaves

Balsamic glaze

Method

In a large bowl, combine all burger ingredients and form into your preferred patty size.

Heat a medium pan with olive oil. Cook chicken patties for about 4–5 minutes each side, until golden brown and cooked through. Add cheese to the top of each patty and cook until melted.

Place patties on a serving plate. Top with sliced tomatoes, fresh basil and a drizzle of balsamic glaze.
