Lemon Salmon Salad
Serves 2
Ingredients
- 300g salmon fillets
- 1 lemon, juiced
- 1 clove garlic, minced
- salt and pepper
- 2 tbsp. coconut oil
- 4 cups baby spinach
- 1 cup cherry tomatoes
- 1 cucumber, chopped
- 2 tbsp. walnuts
Method
- Preheat oven to 190C and line a baking tray with baking paper. Place the salmon on the tray.
- Mix lemon juice, garlic, salt and pepper together and pour over the salmon. Pop a dollop of coconut oil on each bit of salmon and bake for 15 minutes or until cooked to your liking.
- Divide the baby spinach between plates and top with tomatoes, cucumber and walnuts. Add the salmon and pour over the pan juices.
