Homemade butter chicken

Serves 12

Ingredients

  • 1 onion, diced

  • 6 cloves garlic

  • 3 tbsp turmeric powder

  • 1 1⁄2 tbsp EACH of ginger powder, cardamom, coriander, cumin, & paprika

  • 1-1.5 kg chicken thighs, whole & untrimmed 
  • 2-3 cans coconut cream

  • 1-2 cups homemade broth or good quality stock 
  • 1 can crushed tomatoes

  • Salt & pepper

  • Squeeze of lemon juice

  • Pinch of chilli flakes (optional) 

Method

  1. Sauté the onion and garlic in coconut oil in a big sturdy pot until cooked. 
  2. Add spices and cook for a few minutes, letting the aromas build.
  3. Add the chicken and coat it in the spices, stirring for a few minutes.
  4. Add in the coconut cream, some of the homemade stock, and tomatoes. 
  5. Put the lid on and leave to simmer for as long as you desire, stirring occasionally to avoid burning the bottom.
  6. You can also transfer the pot to the oven at this stage to avoid a burnt bottom and cook on low for 2-3 hours. 
  7. You can also add veggies in with 10 minutes left to go and stir. I suggest kale, broccoli and beans. 
  8. Squeeze with lemon and season with salt & pepper before serving.
