Serves 4

Ingredients

Chicken

  • 650g chicken breast, cubed
  • 1½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp pepper
  • ⅓ cup corn flour
  • 2 tbsp avocado oil

Sauce

  • ⅓ cup honey
  • 1 tsp grated ginger
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • ¼ tsp salt
  • 1 tbsp sesame seeds

Rice

  • 2 cups jasmine rice, cooked

Vegetables

  • 1 tbsp avocado oil
  • 100g snow peas
  • 100g broccoli florets
  • 1 carrot, shredded
  • Salt and pepper to taste
  • 1 spring onion, chopped

Method

  1. Place chicken in a bowl with garlic powder, corn flour, salt and pepper. Toss well to coat.
  2. Heat avocado oil in a large skillet over medium-high heat. Add chicken and cook for 6-7 minutes.
  3. Turn chicken and cook for a further 5-6 minutes until golden and cooked through. Transfer to a plate.
  4. In a bowl, combine all sauce ingredients and mix well. Reserve approximately ¼ cup of sauce.
  5. Add chicken back into the sauce and toss until evenly coated.
  6. Add avocado oil to the skillet and cook broccoli and snow peas for 7-10 minutes.
  7. Add carrot and 1 tablespoon of the reserved sauce. Cook for a further 3-5 minutes.
  8. Divide rice between bowls. Top with vegetables and chicken.
  9. Garnish with spring onion and drizzle with remaining sauce before serving.
