Tuna niçoise smashed potato pie (high protein + gut friendly)
Serves: 6
Ingredients
- 6 medium potatoes, boiled and cooled
- 4 eggs
- 100ml almond milk
- 400g canned tuna (or salmon)
(vegetarian option: feta or tofu) - 100g green beans, halved
- 100g pitted kalamata olives
- 200g cherry tomatoes, halved
- ½ small red onion, sliced
- 100g mozzarella cheese
- Fresh dill
Method
- Preheat oven to 180°C.
- Line a round baking dish with baking paper.
- Use the bottom of a glass to smash the cooled potatoes and press them into the base and slightly up the sides.
- Layer tuna, onion, green beans, cherry tomatoes, olives, and dill over the potato base.
- Whisk eggs with almond milk, salt, and pepper.
- Pour over the filling.
- Top with mozzarella cheese.
- Bake for 35–45 minutes until golden and set.
