Taco Lasagna

Serves: 5-6
Ingredients:

  • 2 tbsp olive oil

  • 900g beef mince

  • 1 medium onion, chopped

  • 4 garlic cloves, chopped

  • 1 green capsicum, diced

  • 1 can black beans, drained

  • 1 jar salsa (400g)

  • 2 tbsp taco seasoning

  • 1 tbsp ground cumin

  • 1 tbsp chilli powder

  • 1/2 tsp salt

  • 4-6 wholegrain tortillas

  • 2 tomatoes, chopped

  • 200g cheddar cheese, shredded

  • 200g mozarella cheese, shredded

Method:

  1. Preheat oven to 200°C and grease a baking dish.

  2. Sauté onion, garlic, and capsicum. Add beef mince and brown.

  3. Stir in beans, salsa, seasonings, and cook for 2 minutes.

  4. Layer tortillas, beef mix, tomatoes, and cheese in a baking dish.

  5. Bake for 20 minutes, then let rest for 10 minutes before serving.
