Taco Lasagna
Serves: 5-6
Ingredients:

2 tbsp olive oil

900g beef mince

1 medium onion, chopped

4 garlic cloves, chopped

1 green capsicum, diced

1 can black beans, drained

1 jar salsa (400g)

2 tbsp taco seasoning

1 tbsp ground cumin
-
1 tbsp chilli powder
-
1/2 tsp salt

4-6 wholegrain tortillas

2 tomatoes, chopped

200g cheddar cheese, shredded

200g mozarella cheese, shredded
Method:

Preheat oven to 200°C and grease a baking dish.

Sauté onion, garlic, and capsicum. Add beef mince and brown.

Stir in beans, salsa, seasonings, and cook for 2 minutes.
