High-protein raspberry cheesecake recipe

Ingredients

2 eggs

160g Greek yoghurt

200g cottage cheese

¼ cup honey
-
1 tsp vanilla extract

2 tbsp cornflour
-
½ cup frozen raspberries
Optional:

1 serve strawberry or vanilla protein powder (for extra protein boost)
Method

Preheat oven to 180°C.

Add all ingredients except raspberries to a blender and blend until smooth.

Pour mixture into a lined baking dish and scatter raspberries over the top.

Bake for 40–45 minutes until just set.

Cool for 15 minutes, then refrigerate for at least 1 hour.
