  • 4 chicken breasts (700g)

  • 50g baby spinach, finely chopped

  • Β½ cup dried cranberries

  • 100g brie cheese, sliced

  • 1 tbsp olive oil

  • 1Β½ tsp garlic powder

  • 1Β½ tsp dried thyme

  • 1Β½ tsp paprika

  • Salt and pepper to taste

Method

  1. Preheat oven to 190Β°C.

  2. Slice a deep pocket into each chicken breast (don’t cut through).

  3. Stuff each breast with spinach, cranberries & brie. Secure with toothpicks.

  4. Drizzle with olive oil and season with salt, pepper, garlic, thyme & paprika.

  5. Sear chicken for 2–3 mins each side until golden.

  6. Transfer to baking tray and roast 20–25 mins, until cooked through.

  7. Rest for 5 mins, remove toothpicks, slice and serve warm.
