Chicken Burrito Bowl

Serves: 4

Ingredients

Rice

  • 300g basmati rice

  • 1 onion, roughly chopped

  • 1 jalapeño, roughly chopped

  • 2–3 cloves garlic

  • 2 handfuls coriander leaves & stalks

  • 500ml salt-reduced chicken stock

  • Salt, to taste

Chicken

  • 500g boneless skinless chicken thighs or breast, cut into 1cm strips

  • 2 tsp garlic powder

  • 2½ tsp paprika

  • 2 tsp oregano

  • 2 tsp cumin

  • 1 tsp red chilli flakes

  • Juice of 1 lime

  • Salt & pepper

Fresh Salad

  • 300g tomatoes, diced

  • 1 red onion, diced

  • 2 handfuls coriander, chopped

  • Juice of 1 lime

Creamy Green Sauce

  • 150g Greek yoghurt

  • 1 avocado

  • 1 jalapeño

  • Juice of 1 lime

  • A handful of coriander leaves

Method

1. Make the flavour-packed rice

Blend the onion, jalapeño, garlic, coriander and a pinch of salt until smooth.

Heat a lightly greased saucepan over medium heat. Add the rice, blended mixture and chicken stock.

Bring to the boil, then cover and reduce to low-medium for 8–10 minutes until liquid is absorbed.

Turn heat to low and cook another 10–12 minutes. Turn off heat and rest (covered) for 8–10 minutes to steam.

2. Cook the chicken

Place chicken in a bowl with all spices, lime juice, salt and pepper. Mix well and marinate for 30 minutes if possible.

Transfer to a lined baking tray and bake at 200°C for 10–12 minutes until cooked through and lightly charred.

3. Make the fresh salsa

Mix tomatoes, red onion, coriander and lime juice in a bowl. Set aside.

4. Blend the green sauce

Add all sauce ingredients to a blender and blend until smooth and creamy.

5. Assemble

Divide rice between bowls, top with chicken and fresh salad. Drizzle with creamy green sauce and enjoy.
