High Protein Buffalo Chicken Hot pocket
Serve: 6 hot pockets
Ingredients
Buffalo Chicken:
- 500g chicken breast, diced
- 1 ½ tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp cayenne
- 2 tbsp olive oil
- Salt and pepper to taste
Hot Pocket Dough:
- 400g plain flour
- 400g Greek yoghurt
Buffalo Chicken Sauce:
- 150ml sriracha sauce
- 30g butter
- 1 tbsp apple cider vinegar
- 30g honey
- Slurry: 1 tsp cornstarch mixed with 2 tsp water
Other:
200g mozzarella cheese
Method:
1. Marinate the chicken by combining all the ingredients. Set aside for at least an hour.
2. Dough: Combine yogurt & flour and form into a dough. Let it rest for 20 minutes before assembling.
3. Heat a frying pan over medium heat, cook the chicken until golden brown.
Remove from the pan and set aside.
4. Making the sauce: Place all the ingredients in the sauce pan and bring it to a boil then reduce the heat. Add in the cooked chicken and combine. Cook until the sauce has thickened. Allow it to cool.
5. Assemble: Divide the dough into 8 small pieces and form into balls. Flatten each ball and roll it out. Add chicken and mozzarella cheese at the center. Carefully fold to seal the fillings. Repeat the same process until done.
6. Place these pockets in a pan with cooking spray on medium heat, cover with a lid and cook for 3-4 minutes on each side. Enjoy!
