
High protein and low carb slow cooker chilli con carne
This healthy high protein and low carb Slow Cooker Chilli con Carne recipe is one of our family favourite recipes.
It is SO GOOD! With 30g protein and only 15g carbs PLUS it is packed with iron, vitamins, antioxidants and an excellent source of fibre, and micronutrients like folate and magnesium; aids digestion and blood sugar control.
Slow Cooker Chilli con Carne
Serve: 4
Ingredients:

500g beef mince

1/2 Onion, diced

400g can - chopped tomatoes
- 400g can - kidney beans, Drained and rinsed
- 1 ½ tbsp tomato paste
- 1 cup Beef stock
- 1 tsp Dried oregano
- 2 tsp Garlic powder
- 1 ½ tsp Ground cumin
- ½ tsp Cayenne Pepper
- Salt and pepper to taste
- 20g Dark chocolate
- 1 red capsicum, diced
Method:
Put all of the slow cooker ingredients except capsicum and chocolate into the slow cooker and cook for 5- 6 hours on high or 8 hours on low.
Add capsicum about 30 minutes before the end of cooking.
Add chocolate and stir to melt. Serve with rice. Garnish with coriander.
