Sheet Pan Chicken Fajitas
Serves: 2
Ingredients:

1 red capsicum, sliced

1 green capsicum, sliced

1 yellow capsicum, sliced

2 tomatoes, halved
-
1 onion, sliced
-
300g chicken breast, sliced
-
2 tbsp olive oil
-
2 tbsp taco seasoning
-
1 avocado, sliced
-
1 lime, halved
-
Fresh coriander, for garnish
Method:

Preheat oven to 220°C.

Arrange chicken, capsicum, tomatoes, and onion on a baking tray.

Drizzle with olive oil and sprinkle with taco seasoning.

Bake or (air fry if preferred!) for 20-25 minutes, or until chicken is fully cooked.

Serve with avocado, a squeeze of lime, and fresh coriander.
