High Fibre & Low Carb Apple Cake

This High Fibre & Low Carb Apple Cake recipe from the Zing Wellbeing app and meal plan is absolutely amazing!  

It is rich in fibre, high in protein plus loaded with vitamin C, vitamin B, calcium, Vitamin E & antioxidants. 

Great for gut health! 

Apple Cake

Serve: 6 

Ingredients

  • 4-5 apples, peeled and thinly sliced
  • 3 eggs
  • 160 ml almond milk
  • 3 tbsp almond butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup almond flour
  • 1/2 cup Monk Fruit Sweetener (or sweetener of choice)
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt

Optional serve of vanilla protein powder.

Method: 

  1. Preheat your oven to 175C. Line a 9×5" loaf pan with parchment paper.
  2. In a large bowl, whisk together the eggs, milk, butter + vanilla. 
  3. Add in flour, sweetener, cinnamon, baking powder and salt and mix until smooth. 
  4. Stir in apples and  mix to coat with the batter. 
  5. Transfer the apple batter to the pan and press gently. 
  6. Bake for 50-60 minutes until the top is golden brown.
  7. Once done, allow it to cool and sprinkle powdered sugar. 
  8. Slice and enjoy!
