Lemon honey soy prawn stirfry

 

Serves 1

INGREDIENTS
• 150g prawns
• 100g brown rice
• 1 capsicum (bell pepper), sliced
• 1 zucchini, sliced
• 1 tbsp olive oil
• 2 tbsp soy sauce
• 1 tbsp honey
• 1 tbsp lemon juice
• 1 tsp lemon zest
• 2 cloves garlic, minced
• 1/2 tsp grated ginger (optional)
• Salt and pepper to taste



METHOD:

  • Cook the brown rice.
  • In a small bowl, mix soy sauce, honey, lemon juice, lemon zest, minced garlic, and grated ginger.
  • In a bowl, season the prawns with salt and pepper.
  • Pour half of the sauce over the prawns and let them marinate for at least 15 minutes.
  • Heat 1 tbsp olive oil in a large pan or wok over medium-high heat.
  • Add the sliced capsicum and zucchini and stirfry until they are tender-crisp, about 5-7 minutes.
  • Remove the vegetables from the pan and set aside. In the same pan, add the marinated prawns and stir-fry until they are pink and cooked through, about 3-5 minutes.
  • Return the vegetables to the pan with the prawns. Pour the remaining sauce over the prawns and vegetables. Stir well to coat everything in the sauce and cook for an additional 2 minutes
