French onion soup potato bake

This delicious potato bake recipe was shared with us by community member Chelsea Dixon and we thought it sounded so tasty!  You have to try this one for yourself. 

French onion soup potato bake

Ingredients

  • 750g of Spudlight potatoes thinly sliced
  • 1 salt reduced French Onion Soup Mix
  • 1 head of broccoli finely chopped
  • 300ml of lite cream 
  • 125ml of skim milk 
  • Paprika for the top 
  • Salt and pepper to season

Method  

  1. Slice potatoes then microwave them on high for 10 minutes.
  2. Rinse in cold water and layer them into the base of a lightly greased casserole dish.
  3. Sprinkle with a bit of the French onion soup mix then layer broccoli and potato and repeat until all the ingredients are used.
  4. Pour the cream and milk mix over the top and sprinkle with paprika. 
  5. Bake for 60 minutes with foil on top then 30 minutes uncovered.
