Serves: 2

Ingredients

  • 250ml unsweetened almond milk
  • 200g dragon fruit, chopped
  • 60g chia seeds

Method

  1. Add the almond milk and ¾ of the chopped dragon fruit to a blender, reserving the remaining dragon fruit for topping.
  2. Blend until smooth.
  3. Add the chia seeds and ¼ cup of the Greek yoghurt. Pulse a few times until just combined.
  4. Divide the mixture evenly between two jars or containers.
  5. Cover and refrigerate for at least one hour, or overnight, until the chia pudding has thickened.
  6. Before serving, top with the remaining Greek yoghurt and chopped dragon fruit.
  7. Enjoy!
