Crustless Quiche Recipe

We have this amazing crustless Quiche recipe sent in by one of our community members. You simply must try this one.  So easy and so good for you with all those amazing healthy ingredients. 

Crustless Quiche Recipe 

Seves 4-6
Ingredients:
  • 8 to 10 eggs
  • 250g silken tofu (or greek yoghurt if preferred)
  • 1 tbsp Nutritional yeast flakes
  • 3 tsp fresh thyme
  • 2-3 garlic cloves crushed
  • 70g feta cheese crumbled (or preferred cheese of choice)
  • 1 leek sliced thinly
  • 40g of baby spinach
  • 500-600g of sweet potato sliced into about 10 rounds
  • 1 bunch of Broccolini.
Method:
I subbed the Greek yoghurt (too many saturated fats for me) for silken tofu and only a small amount of feta cheese.
  • Brush sweet potato with some olive oil and season, bake in the oven at 200C until tender.
  • Cook sliced leek, garlic and thyme in a fry pan with a small amount of olive oil and cook until tender.
  • Steam Broccolini quickly, about 3 minutes.
  • Mix eggs, nutritional yeast flakes and tofu in a blender until combined and season.
  • Line a 20cm cake tin (springform works well) with baking paper.
  • Layer all the vegetables as desired in the tin. Pour egg mixture over the top and crumble feta on the top.
  • Bake in 180c oven for about 1 hour or until golden brown on top.
  • Once cooked allow to cool for about 5 minutes.
