How to make coconut lime chilli chicken rice broth

Step 1: Marinate the Chicken

In a large bowl, combine the chicken thighs with grated ginger, oyster sauce, light soy sauce and dark soy sauce. Allow the chicken to marinate for at least 30 minutes to maximise flavour.

Step 2: Cook the Chicken

Heat olive oil in a large pan over medium heat. Add the marinated chicken thighs and cook for 5–6 minutes on each side until golden brown and cooked through.

Transfer the chicken to a plate and set aside.

Step 3: Build the Flavourful Broth

Using the same pan, add the garlic, ginger, spring onions, fresh chilli and chilli oil. Stir for around 1 minute until fragrant.

Pour in the chicken stock and coconut milk, stirring well to combine.

Bring the broth to a gentle boil.

Step 4: Add Vegetables and Seasoning

Add the bok choy, lime juice, rice wine vinegar, fish sauce and soy sauce.

Simmer for 1–2 minutes until the bok choy is slightly wilted but still vibrant.

Remove from heat.

Step 5: Serve

Divide the cooked brown rice between four bowls.

Top with chicken thighs and spoon over the creamy coconut broth.

Finish with fresh coriander, chilli and lime wedges.
