Ingredients

For the Cake:

  • 1 cup (120g) almond flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 3 large eggs
  • 1/3 cup (80g) unsweetened applesauce (or mashed banana for natural sweetness)
  • 1/4 cup (60ml) maple syrup or honey
  • 1 tsp vanilla extract
  • 2 tbsp dark chocolate chips (optional, for added richness)

For the Festive Decoration:

  • 50g dark chocolate (70% or higher), melted
  • 2 tbsp plain Greek yogurt (for creamy drizzle)
  • Natural food coloring (green, if desired)
  • Edible decorations (use sparingly for a healthier touch, such as dark chocolate shavings, freeze-dried berries, or nuts)

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F). Line a round 8-inch cake pan with parchment paper or grease lightly with a bit of coconut oil.

  2. Mix Dry Ingredients: In a large bowl, whisk together almond flour, cocoa powder, baking soda, and salt.

  3. Mix Wet Ingredients: In a separate bowl, whisk the eggs, applesauce, maple syrup, and vanilla extract until smooth.

  4. Combine: Gradually fold the wet ingredients into the dry ingredients until fully combined. Stir in the dark chocolate chips, if using.

  5. Bake: Pour the batter into the prepared pan and spread evenly. Bake for 20–25 minutes or until a toothpick inserted into the center comes out clean.

  6. Cool: Allow the cake to cool completely before decorating.

  7. Prepare Decoration: Mix melted dark chocolate with Greek yogurt for a creamy frosting. Add natural green food coloring if desired. Transfer the mixture to a piping bag or use a spoon for drizzling.

  8. Decorate: Drizzle the green frosting in zigzag patterns. Add minimal edible decorations for a festive touch.
