Chocolate peanut butter and oat cups
With only 4 ingredients and no baking these are such an easy snack to make.
If you don’t like peanuts or peanut butter you can easily swap for almond too.
Also if you prefer you can toast the oats in the oven for 10 mins for a slightly nuttier flavour. Thanks to Sarah Jane for sharing this recipe with us.

Chocolate peanut butter and oat cups
Makes 6 large cups (or you can make mini ones)
Base ingredients
- 1.25 cup GF oats (100g) (or oats of choice)
- 2/3rd cup runny peanut butter (160g)
- 3 tbsp maple syrup
- 2/3 cup vegan dark chocolate chips (100g)
- 2 tbsp smooth peanut butter
- Sprinkle of salt or peanuts, optional
Method:
- Put all the base ingredients into large bowl and mix thoroughly. It should be slightly sticky and not crumbly. If your peanut butter is harder, add a little more.
- Press the mix into a silicone muffin tray (or use cupcake cases). Press down so it is tightly packed. Refrigerate whilst you melt the chocolate.
- Melt the chocolate and peanut butter together for the topping, pour onto the base, then refrigerate again to set.
- They will last a week in the fridge.
Benefits:
Dark chocolate is rich in minerals, such as iron, magnesium, and zinc. It can have various health benefits, including reducing inflammation and decreasing the risk of heart disease.
Nuts are a good source of plant protein. They also contain monounsaturated fats, which may be a factor in reducing the risk of heart disease.
