We love a chocolate treat and we love it even more when it is a healthy chocolate treat.

This chocolate recipe is a classic slice recipe that everyone loves and is the Weetbix slice recipe.

A simple old fashioned treat we all grew up with. I know many grandmas had their own secret twist on this classic slice. 

Rich and chocolatey, just perfect for lunchboxes and afternoon snacks.

WeetBix Slice

Serves: 12
Preparation time: 10 minutes
Cooking time: Refrigerate for 2 hours

Ingredients:

  • 4 Weet-Bix biscuits, crushed
  • ½ cup unsweetened shredded coconut
  • ¼ cup unsweetened cocoa powder
  • ½ cup almond butter (or any nut butter)
  • ¼ cup honey or maple syrup
  • ¼ cup unsweetened almond milk (or any milk)
  • 1 tsp vanilla extract
  • ¼ cup dark chocolate chips (optional, for extra richness)
  • 1 tbsp chia seeds (optional, for added fibre)

 

 

Method

  1. In a large mixing bowl, combine the crushed Weet-Bix, shredded coconut, and cocoa powder.
  2. In a separate bowl, mix together the almond butter, honey (or maple syrup), almond milk, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients. Stir until everything is well combined and forms a sticky mixture.
  4. If using, fold in the dark chocolate chips and chia seeds.
  5. Line a small baking dish (about 8x8 inches) with parchment paper. Press the mixture evenly into the dish using the back of a spoon or your hands.
  6. Refrigerate the slice for at least 2 hours, or until firm.
  7. Once set, cut into squares and enjoy. Store in the refrigerator for up to a week.
