Chicken Pad Thai
Serves 4
INGREDIENTS
• 4 chicken breasts, sliced
• 200g rice noodles
• 1 large capsicum, sliced
• 2 carrots, julienned
• 1/4 cup green onions, chopped
• 1/4 cup crushed peanuts
• 2 tbsp soy sauce
• 1 tbsp fish sauce
• 1 tbsp olive oil
• 2 cloves garlic, minced
• 1 lime, cut into wedges
METHOD
- Cook rice noodles according to package instructions. Drain and set aside.
- Heat olive oil in a pan over medium high heat.
- Add garlic and sauté until fragrant.
- Add chicken and cook until browned.
- Add capsicum, carrots, soy sauce, and fish sauce, and cook until vegetables are tender.
- Add cooked noodles and toss to combine.
- Serve with green onions, crushed peanuts, and lime wedges
