Chicken Pad Thai 

Serves 4

INGREDIENTS
• 4 chicken breasts, sliced
• 200g rice noodles
• 1 large capsicum, sliced
• 2 carrots, julienned
• 1/4 cup green onions, chopped
• 1/4 cup crushed peanuts
• 2 tbsp soy sauce
• 1 tbsp fish sauce
• 1 tbsp olive oil
• 2 cloves garlic, minced
• 1 lime, cut into wedges

METHOD

  1. Cook rice noodles according to package instructions. Drain and set aside.
  2. Heat olive oil in a pan over medium high heat.
  3. Add garlic and sauté until fragrant. 
  4. Add chicken and cook until browned.
  5. Add capsicum, carrots, soy sauce, and fish sauce, and cook until vegetables are tender.
  6. Add cooked noodles and toss to combine.
  7. Serve with green onions, crushed peanuts, and lime wedges
