Chicken Bake

Serves: 4

Preparation time: 15 minutes

Cooking time: 45 minutes

Ingredients:

  • 2 cups pumpkin, peeled and diced
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups broccoli, cut into florets
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup unsweetened almond milk
  • ½ cup low-fat Greek yogurt
  • ½ cup low-sodium chicken broth
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • ½ cup grated Parmesan cheese 
  • Fresh parsley, chopped (for garnish)

Method

  1. Preheat your oven to 190°C (375°F).
  2. Peel and dice the pumpkin into small cubes. Place the pumpkin in a microwave-safe bowl with a splash of water, cover, and microwave for 5-6 minutes until slightly tender. Drain any excess water and set aside.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the chopped onion and garlic. Cook until the onion is translucent and fragrant.
  5. Add the chopped broccoli and continue to cook until tender. Stir occasionally. 
  6. Lower the heat to medium and add the milk, Greek yogurt, and chicken broth to the skillet. Stir well to combine. Add thyme, rosemary, paprika, salt, and pepper. Let it simmer for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
  7. Add the cooked chicken and pumpkin to the skillet with the sauce. Stir gently to coat everything evenly with the creamy mixture.
  8. Transfer the mixture to a baking dish. Sprinkle the grated Parmesan cheese on top and bake in the preheated oven for 20-25 minutes, until the top is golden and the bake is heated through.
