Chicken and Barley Soup

Serves 6-8

Ingredients: 

  • 1 tbs olive oil
  • 2 onions (or 1 onion and I leek finely chopped)
  • 2 cloves crushed garlic
  • 2 medium carrots finely diced
  • 2 celery sticks diced
  • 1 zucchini diced
  • 1/3 cup plain wholemeal flour
  • 2 litres of chicken stock
  • 1 cup pearl barley, rinsed
  • 2 chicken breasts
  • Salt and pepper to taste 

Method:

Poach 2 chicken breasts in the chicken stock to shred and add to the soup. Keep the stock for later…

Stir fry all veg until soft but not coloured, add flour and stir a further minute.

Slowly add stock, stirring until all the flour is incorporated and there are no lumps.

Add barley and simmer approx 20 mins until barley is tender. 

Add the shredded chicken and season. Chopped green beans can also be added about 5 mins before serving.  Baby spinach can also be stirred through at the end 

Serve in large bowls.
