This healthier take on a classic apple crumble cake uses wholesome ingredients to create a light yet satisfying dessert or snack. It’s naturally sweetened, includes fibre-rich wholemeal flour, and offers the comforting flavours of cinnamon and apples.

Ingredients

For the Base and Crumble:

  • 150g wholemeal flour (or a mix of wholemeal and almond flour)
  • 50g rolled oats
  • 75g coconut sugar (or use unrefined brown sugar)
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 100g unsalted butter (cold, cut into cubes) or coconut oil for a dairy-free option
  • 1 large egg

For the Apple Filling:

  • 3 medium apples (peeled, cored, and thinly sliced)
  • 2 tbsp maple syrup (or honey)
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 tbsp cornflour (optional, for thickening)

Method

1. Prepare the Base and Crumble:

  1. Preheat your oven to 170°C (fan-assisted). Grease and line a square baking tin (approx. 20x20cm) with parchment paper.
  2. In a mixing bowl, combine the flour, oats, coconut sugar, baking powder, and cinnamon.
  3. Add the cold butter or coconut oil. Use your fingers to rub it into the dry ingredients until the mixture resembles coarse crumbs.
  4. Reserve about 1/3 of the mixture for the crumble topping. Add the egg to the remaining mixture and mix until a soft dough forms. Press this dough evenly into the base of your prepared tin.

2. Make the Apple Filling:

  1. In a bowl, toss the sliced apples with maple syrup, cinnamon, lemon juice, and cornflour (if using).
  2. Arrange the apple slices evenly over the base.

3. Add the Crumble Topping:

  1. Sprinkle the reserved crumble mixture evenly over the apples.

4. Bake:

  1. Bake in the preheated oven for 30–35 minutes, or until the crumble topping is golden brown and the apples are tender.
  2. Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
