Ingredients
For the Base and Crumble:
- 150g wholemeal flour (or a mix of wholemeal and almond flour)
- 50g rolled oats
- 75g coconut sugar (or use unrefined brown sugar)
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 100g unsalted butter (cold, cut into cubes) or coconut oil for a dairy-free option
- 1 large egg
For the Apple Filling:
- 3 medium apples (peeled, cored, and thinly sliced)
- 2 tbsp maple syrup (or honey)
- 1 tsp ground cinnamon
- 1 tbsp lemon juice
- 1 tbsp cornflour (optional, for thickening)
Method
1. Prepare the Base and Crumble:
- Preheat your oven to 170°C (fan-assisted). Grease and line a square baking tin (approx. 20x20cm) with parchment paper.
- In a mixing bowl, combine the flour, oats, coconut sugar, baking powder, and cinnamon.
- Add the cold butter or coconut oil. Use your fingers to rub it into the dry ingredients until the mixture resembles coarse crumbs.
- Reserve about 1/3 of the mixture for the crumble topping. Add the egg to the remaining mixture and mix until a soft dough forms. Press this dough evenly into the base of your prepared tin.
2. Make the Apple Filling:
- In a bowl, toss the sliced apples with maple syrup, cinnamon, lemon juice, and cornflour (if using).
- Arrange the apple slices evenly over the base.
3. Add the Crumble Topping:
- Sprinkle the reserved crumble mixture evenly over the apples.
4. Bake:
- Bake in the preheated oven for 30–35 minutes, or until the crumble topping is golden brown and the apples are tender.
- Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
